Here is a simple and delicious recipe for potato and tuna salad:

  • 4 medium potatoes (about 500 grams)
  • 1 can of tuna in oil (about 160 grams), drained and sliced
  • 1/2 red onion, finely chopped
  • Fresh parsley or dill for garnish (optional)
  • Chopped black olives
  • 1/2 cup sweet corn (canned or frozen)
  • 1/4 teaspoon black pepper
  • A pinch of salt to taste
  • 1 tablespoon vinegar or lemon juice
  • Olive oil
    • Peel the potatoes (if desired) and cut them into bite-sized cubes.
    • Boil them in a pot of salted water for 10-12 minutes or until tender when pierced with a fork.
    • Drain the potatoes and let them cool for a few minutes.
      • While the potatoes are cooling, drain and crumble the tuna in a large mixing bowl.
      • Add finely chopped red onion and sweet corn to the bowl.
