Lemon Cake: How To Make The Best Tangy Treat At Home

Here’s a recipe for a moist lemon cake that’s bursting with fresh flavor and incredibly soft and tender ; a delicious and moist cake recipe that you can easily make!

For the cake we need:

  • 200g all-purpose flour
  • 14g baking powder
  • ¼ tsp salt
  • 100g oil
  • 80g granulated sugar
  • 3 large eggs
  • zest of 1 large lemon
  • 150g hot plain milk
  • 50g coconut
  • 1 tbsp lemon juice
    For decoration:
  • Jam
  • Coconut or almonds

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round or square cake pan, or line it with parchment paper.

In a bowl, beat together the eggs, granulated sugar, and a pinch of salt until light and fluffy. This should take about 3-4 minutes using an electric mixer. Add the oil a little at a time, beating well after each addition.

Add the zest, grate the coconut, beat everything together while adding the hot milk well, stirring constantly. Gradually add the dry ingredients (flour and yeast) to the wet mixture, mixing gently until combined. Be careful not to overmix. And of course, don’t forget to pour a tablespoon of lemon juice into the pan and put it in the oven.

Once done, remove from the oven and allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.


Once the cake has cooled completely and the icing has set, slice and enjoy this moist and delicious moist cake!
