It is considered a basic soup on the Moroccan table when the weather is cold. It can be made with dried fava beans, peas, or a mixture of both. I am sharing with you my recipe, the dried fava bean version. It is easy and quick to make and is your best ally to warm up in winter!
Ingredients: (for 6 servings)
300g dried fava beans.
6 cloves garlic.
1 tsp salt.
1 tsp cumin.
4 tsp olive oil.
750 ml water.
For training:
1 tsp olive oil, Cumin, paprika, olive oil and chilli (obtionnal)
Preparation Fava Beans Recipes
Start by pouring water into the pressure cooker. When the water becomes hot, add the beans soaked in water overnight. After that, remove the foam, and continue until the water becomes clear and free of this foam. Leaving it spoils the taste of the recipe. Add the garlic cloves, salt, cumin and olive oil.
Close the pressure cooker and place it under pressure. Cook for 20 minutes. You can add a little boiling water if you want a lighter mixture.
Serve hot with olive oil, paprika and cumin. And pepper if you like the spicy taste
