Here is a simple and delicious recipe for preparing fried eggplant with spices:

Ingredients:

  • 2 large eggplants
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon hot pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika (optional)
  • Salt to taste
  • Oil for frying (such as sunflower oil or olive oil)
  • Lemon juice (optional)
  • Chopped parsley
  • Chopped garlic
  • Water to mix the mixture

Method:

1-Prepare fried eggplant:

Wash the eggplant well, then cut it into slices about 1 cm thick. If the eggplant is bitter, you can sprinkle it with salt and leave it for 15 minutes to drain the bitter water, then wipe it well with kitchen paper.

2-Prepare the flour and spice mixture:


In a bowl, mix the flour, cornstarch, turmeric, chili pepper, minced garlic, cumin, paprika (if using), and salt. Mix well with a little water or leave it without water.

3-Coat the eggplant slices:

Dip the eggplant slices in the flour and spice mixture, making sure to coat them completely.

4-Fry:


Heat the oil in a frying pan over medium heat. When the oil is hot, add the eggplant slices and fry until golden and crispy on both sides (about 3-4 minutes per side). If necessary, fry in batches so as not to crowd the pan.

5-Serve:

Once the slices are crispy, place them on kitchen paper to absorb excess oil. You can garnish them with chopped mint leaves and squeeze lemon juice over them to add a refreshing flavor.

6-Serve:


Serve the fried eggplant with spices as a delicious side dish with rice or as a snack with fried fish or your favorite sauces.

Tips:

  • You can add hot pepper to the spice mixture if you like spicy food.
  • For a creamier texture, you can mix the flour with a little water to make a light dough instead of just dry flour.
